Lentil Soup – Linsensuppe　

1/ ​​​​​​​​​Prepare the lentils:
Wash the lentils and drain well. Place them in a pot with 1.2L of water and simmer for about 20 minutes. Once it begins to boil, add the bouillon.

2/ Prepare the vegetables:
Wash the potatoes, carrots, celeriac, and leeks. Dice them into 1cm cubes. Finely chop the parsley.

3/ Sauté the vegetables:
In a separate pot, heat 1 tablespoon of butter. Add all the vegetables except for the parsley and sauté until lightly softened.

4/ Cook the soup:
Add the lentil soup to the pot with the sautéed vegetables. Simmer over medium heat for another 20 minutes.

5/ Prepare the sausages (optional):
Slice the sausages into rounds and either fry them separately or add them directly to the soup to cook along with the vegetables.

6/ Season the soup:
Adjust the flavor with white wine vinegar (or your choice of vinegar), salt, and pepper to taste.

7/ Serve and enjoy:
Ladle the soup into bowls, garnish with chopped parsley, and add the fried sausages if desired. Enjoy your hearty lentil soup!
